I always hated nicking myself on a jagged piece of shell and then squeezsing lemon juice in it inadvertently At one point in my life I lived in Maine and worked the summer as a cook in a tourist trap restaurant. Mostly I cooked lobster. Usually several at a time and for the most of the time I could go through 100 a night on a weekend. Know this: The lobsters really really don't want to get caught. Every time I'd go to get some out of the tank it would flip its tail and shoot backwards at a unbelievable speed. The result was numerous tiny cuts into which I would squeeze lemon juice repeatedly all night long. This coupled with burns from the flaming hot oven door that was right next to me made for a crappy job, not to mention the head cook constantly calling me GUY from about six inches away from my face. You should try to catch them while scuba diving at night. Challenging to say the least !! I actually swam into a 8 or 10' shark while chasing one.
