I have a throttle opener on my pathfinder. Does any one know how to set it to open the throttle to the appropriate amount? How much should this opener open said throttle?

I can't find it in the FSM.

Are you talking about the small set screw like thing that meets up with the throttle cam and has an 8mm lock nut on it?

Not the fast idle cam.

There is a plunger above the throttle by the EGR. See attached....

To be honest I have no idea what that is. Maybe a warm up assist type thing?

I'm not sure about your specific application. Generally the things like that are for idle assist. Idle up when the a.c. is turned on. Possibly cold idle assist. From the pic it looks like you have a 4 cylinder?

They generally won't rest completely on the throttle arm.

It's a 6 cyl engine. The plunger only extends when there is no vacuum.....so I'm assuming it's for startup.
