will 31" tires fit a stock 2000?

Will they fit, yes. Will they rub, probably not but maybe at full lock.

I have 245/75r16 on my 2002, which is the same body style as yours. They're 30.5" and fit really well, all I had to do was some extremely minor trimming in the wheel-wells. They're a little over 9.50 wide and fill up the fenders nicely. I don't think they make many, if any, 31x10.5x16 tires.

It also depends on the actual tire. My Goodyears have wide shoulder blocks and wrecked havoc on my inner fender wells with the 2" lift.

I have 31/10.5/15 on my 98 without a lift. Suspension is actually sagging. They only seem to rub on full lock.
